Bake Off Tuesdays: Giant Cookie (Millies Style Cookie)
Welcome to another recipe in time for another episode of The Great British Bake Off.
This week we are doing a giant cookie recipe that went down an absolute treat with my friends! This is also a great idea if you like baking for friends and family for their birthdays but they aren't a fan of cake (unusual personalities, I know!)
For the cookie:
180 baking butter (I used stork)
100g brown sugar
250g self raising flour
1/2 teaspoon of salt
100g milk chocolate (I used Galaxy chocolate) and 100g white chocolate (I used MilkyWay)
For the buttercream:
150g unsalted butter
300g icing sugar
Combine butter with white and brown sugar.
Mix in eggs, one at a time.
Fold in the self raising flour and salt.
Add in the chocolate in big chunks. You can leave the chocolate pieces whole if you want it chunkier, I cut each piece in half.
Spoon mixture into a baking tray.
Bake for 30 minutes (the cookie should still be soft when you take it out because it gets harder when it cools.
Combine the unsalted butter and icing sugar to form the buttercream while the cookie cools.
Once completed cool decorate with buttercream and whatever else you want to use.
This is personally one of my favourite things I've ever baked and is certainly going to be a staple in my home. I actually think I will make one giant cookie more regularly than normal sized cookies, it's actually a lot less hassle!
