Hello and welcome to week two of bake off Tuesdays!
This week we are doing the humble sprinkle cake. If you are from the UK, you may remember this delicacy from your school lunch days. This is absolutely amazing served with warm custard, yum!
200g self raising flour
300g icing sugar
Multi coloured spinkles
Grease a square baking tin and pre-heat oven to 160 degrees C.
Mix the butter with the sugar until smooth.
Mix in the eggs, one at a time.
Sieve in the flour and fold.
Add a dash of milk to the mixture and mix until everything is combined and smooth.
Pour mixture into the baking tin and bake for around 30 minutes.
For the icing, mix the icing sugar with milk until it is the consistency that you want.
Once the cake has baked and cooled, pour over the icing followed by sprinkles.
Leave the icing to set and then cut into squares.
It is absolutely essential, if you haven't already to try this with custard!
